Can any one tell me if its a straight swap from 500 wheel hubs to the 126 hubs which have more sensible PCD, without changing the stub axle on the front and rear; and presumably the backplate of the 500 also requires changing, any thing else?

In a word No , No & thrice NO
The 500 & early 126 stub axles only have two bolts holding the brake backing plate as opposed to 3 on the post '77 models but more important is the size of the axle which is also smaller along with the wheel bearings & seals. The whole 126 stub axle & brake set up is a straight swop.
